Chicken and Chickpea Stew

Ingredients

  • 2 tablespoons Olive oil
  • 1 teaspoon Cinnamon
  • 1 Onion
  • 3 cloves Garlic
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 250 ml Chicken broth
  • 400 g Canned diced tomatoes
  • 400 g Canned chickpeas
  • 1 Fresh coriander for garnish
  • 600 g Chicken thighs
  • 1 Couscous for serving

Instructions

    Heat olive oil in a large pot. Brown chicken pieces on all sides.

    Add onion and garlic. Cook for 3 minutes.

    Add cumin, turmeric, and cinnamon. Stir for 1 minute.

    Pour in tomatoes and broth. Add chickpeas.

    Simmer for 30 minutes until chicken is tender and sauce has thickened.

    Serve over couscous with fresh coriander.
