Basbousa (Semolina Cake)

Ingredients
- 100 g Butter
- 1 teaspoon Baking powder
- 150 g Sugar
- 100 g Desiccated coconut
- 1 teaspoon Vanilla extract
- 300 g Semolina
- 200 g Sugar for syrup
- 200 ml Water for syrup
- 200 g Yoghurt
- 1 Blanched almonds for topping
- 1 tablespoon Lemon juice for syrup
- 1 tablespoon Rose water for syrup
Instructions

Mix semolina, sugar, coconut, yoghurt, melted butter, baking powder, and vanilla.

Let rest for 15 minutes. Preheat oven to 180°C.

Pour into a greased baking dish. Score into diamond shapes.

Place an almond on each piece.

Bake for 25-30 minutes until golden.

Make syrup by boiling sugar and water. Add lemon juice and rose water.

Pour cold syrup over hot basbousa. Let soak for 30 minutes before serving.
