Ingredients

  • 100 g Butter
  • 1 teaspoon Baking powder
  • 150 g Sugar
  • 100 g Desiccated coconut
  • 1 teaspoon Vanilla extract
  • 300 g Semolina
  • 200 g Sugar for syrup
  • 200 ml Water for syrup
  • 200 g Yoghurt
  • 1 Blanched almonds for topping
  • 1 tablespoon Lemon juice for syrup
  • 1 tablespoon Rose water for syrup

Instructions

    Mix semolina, sugar, coconut, yoghurt, melted butter, baking powder, and vanilla.

    Let rest for 15 minutes. Preheat oven to 180°C.

    Pour into a greased baking dish. Score into diamond shapes.

    Place an almond on each piece.

    Bake for 25-30 minutes until golden.

    Make syrup by boiling sugar and water. Add lemon juice and rose water.

    Pour cold syrup over hot basbousa. Let soak for 30 minutes before serving.
