Kunafa (Sweet Cheese Pastry)

Ingredients

  • 200 g Butter
  • 200 ml Water
  • 1 tablespoon Lemon juice
  • 250 g Sugar
  • 300 g Ricotta cheese
  • 200 g Mozzarella
  • 500 g Kunafa pastry
  • 1 tablespoon Rose water
  • 50 g Crushed pistachios

Instructions

    Make syrup: boil sugar and water for 10 minutes. Add lemon juice and rose water. Cool.

    Shred kunafa pastry and mix with melted butter.

    Press half the pastry into a greased round baking dish.

    Mix ricotta and mozzarella. Spread over the pastry.

    Top with remaining pastry. Press down firmly.

    Bake at 180°C for 25-30 minutes until golden and crispy.

    Immediately pour cold syrup over hot kunafa. Top with pistachios.
