Fish Sayadieh

Ingredients

  • 2 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 Fresh parsley
  • 300 g Basmati rice
  • 1 Lemon wedges for serving
  • 4 White fish fillets
  • 3 Onions
  • 50 g Toasted pine nuts
  • 500 ml Fish or vegetable broth

Instructions

    Season fish with cumin, turmeric, salt, and pepper. Pan-fry in olive oil until golden. Set aside.

    In the same pan, caramelize onions slowly until deep brown (15-20 minutes).

    Add rice and broth to the onions. Bring to a boil, then simmer covered for 15 minutes.

    Place fish on top of rice for the last 5 minutes to heat through.

    Serve on a platter garnished with pine nuts, parsley, and lemon wedges.
