Chicken Mansaf

Ingredients

  • 1 Salt and pepper to taste
  • 2 tablespoons Butter
  • 1 Onion
  • 1 teaspoon Turmeric
  • 1 Fresh parsley
  • 400 g Basmati rice
  • 1 kg Chicken pieces
  • 500 ml Chicken broth
  • 500 g Yoghurt
  • 1 teaspoon Allspice
  • 50 g Toasted almonds
  • 50 g Toasted pine nuts

Instructions

    Cook chicken with onion, turmeric, allspice, and broth for 40 minutes until tender.

    Cook rice separately in salted water. Drain.

    Heat yoghurt gently in a saucepan (do not boil), whisking constantly.

    Layer a large platter with rice, then chicken pieces.

    Pour warm yoghurt sauce over the top.

    Garnish with toasted almonds, pine nuts, and parsley.
