Lamb Tagine with Apricots

Ingredients
- 2 tablespoons Olive oil
- 2 tablespoons Honey
- 1 teaspoon Cinnamon
- 1 Onion
- 400 ml Water
- 2 cloves Garlic
- 800 g Lamb shoulder
- 1 teaspoon Cumin
- 400 g Canned diced tomatoes
- 1 Fresh coriander for garnish
- 150 g Dried apricots
- 1 teaspoon Ginger powder
- 1 Couscous for serving

Heat olive oil in a large pot. Brown lamb in batches. Set aside.

Sauté onion and garlic for 3 minutes.

Return lamb to pot. Add tomatoes, apricots, spices, honey, and water.

Bring to a boil, reduce heat, cover and simmer for 2 hours.

The tagine is done when lamb is fork-tender and sauce has thickened.

Serve over couscous, garnished with fresh coriander.
