Ingredients

  • 2 tablespoons Olive oil
  • 1 Lemon
  • 1 Salt and pepper to taste
  • 2 cloves Garlic
  • 2 Hard-boiled eggs
  • 1 teaspoon Cumin
  • 1 Fresh parsley for garnish
  • 1 Pita bread for serving
  • 400 g Canned fava beans

Instructions

    Heat olive oil in a pot. Sauté garlic for 1 minute.

    Add fava beans, cumin, and a splash of water. Simmer for 15 minutes, mashing some beans.

    Season with lemon juice, salt, and pepper.

    Serve in bowls topped with hard-boiled egg quarters and parsley.

    Accompany with warm pita bread.
