Ingredients
- 2 tablespoons Olive oil
- 4 Eggs
- 1 Salt and pepper to taste
- 1 Crusty bread for serving
- 1 teaspoon Chilli flakes
- 1 Fresh parsley for garnish
- 2 Green capsicums
- 3 Ripe tomatoes
Instructions

Heat olive oil in a pan over medium heat. Add capsicums and cook for 3 minutes.

Add tomatoes and chilli flakes. Cook for 5 minutes until tomatoes soften.

Beat eggs and pour into the pan. Stir gently until eggs are just set.

Season with salt and pepper. Garnish with parsley.

Serve immediately with crusty bread.
