Shakshuka with Za'atar Flatbread

Ingredients

  • 100 g Feta cheese
  • 2 tablespoons Olive oil
  • 6 Eggs
  • 1 Onion
  • 1 Red capsicum
  • 2 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 400 g Canned crushed tomatoes
  • 1 Fresh coriander for garnish
  • 4 Flatbreads
  • 1 tablespoon Za'atar

Instructions

    Heat olive oil in a large skillet. Sauté onion, garlic, and capsicum for 5 minutes.

    Add tomatoes, cumin, and paprika. Simmer for 10 minutes.

    Make wells in the sauce and crack eggs into each.

    Cover and cook for 8-10 minutes until eggs are set.

    Top with feta and coriander. Serve with za'atar flatbread.
