Ingredients

  • 80 ml Olive oil
  • 1 Salt and pepper to taste
  • 60 ml Lemon juice
  • 1 bunch Fresh mint
  • 2 bunches Fresh parsley
  • 100 g Fine bulgur wheat
  • 4 Large ripe tomatoes
  • 4 Spring onions

Instructions

    Soak bulgur wheat in boiling water for 15 minutes. Drain and squeeze dry.

    Combine bulgur with diced tomatoes, parsley, mint, and spring onions.

    Whisk olive oil and lemon juice together.

    Pour dressing over the salad and toss well.

    Season with salt and pepper. Refrigerate for at least 30 minutes before serving.
