Ingredients

  • 3 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 100 g Breadcrumbs
  • 3 tablespoons Dijon mustard
  • 2 cloves Garlic
  • 2 tablespoons Fresh rosemary
  • 2 tablespoons Fresh thyme
  • 1 Rack of lamb

Instructions

    Preheat oven to 220°C. Season lamb with salt and pepper.

    Sear lamb in a hot skillet with olive oil on all sides for 2 minutes.

    Brush the seared lamb with Dijon mustard.

    Mix breadcrumbs, rosemary, thyme, and garlic. Press onto the mustard-coated lamb.

    Place on a roasting tray and roast for 20-25 minutes for medium-rare.

    Rest for 10 minutes before slicing between the ribs.
