Sweet Potato and Lentil Soup

Ingredients
- 2 tablespoons Olive oil
- 1 Salt and pepper to taste
- 1 Onion
- 2 cloves Garlic
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 200 g Red lentils
- 1 litre Vegetable broth
- 2 Large sweet potatoes
- 1 Fresh coriander for garnish
Instructions

Heat olive oil in a large pot. Sauté onion and garlic until softened.

Add cumin and turmeric, cook for 1 minute.

Add sweet potatoes, lentils, and vegetable broth.

Bring to a boil, then reduce heat and simmer for 25 minutes until tender.

Blend until smooth using a stick blender.

Season with salt and pepper. Serve with fresh coriander.
