Ingredients
- 50 g Feta cheese
- 2 tablespoons Olive oil
- 1 Salt and pepper to taste
- 200 g Quinoa
- 1 tablespoon Lemon juice
- 1 Cucumber
- 1 Fresh mint leaves
- 100 g Cherry tomatoes
- 100 g Chickpeas
- 50 g Kalamata olives
Instructions

Cook quinoa according to package directions. Fluff with a fork and let cool slightly.

Divide quinoa between two bowls.

Top with cucumber, tomatoes, olives, chickpeas, and feta.

Drizzle with olive oil and lemon juice.
