Ingredients
- 3 Eggs
- 250 g Honey
- 1 teaspoon Baking powder
- 1 teaspoon Cinnamon
- 180 ml Vegetable oil
- 250 g Plain flour
- 200 g Sugar
- 1 teaspoon Vanilla extract
- 1 teaspoon Baking soda
- 180 ml Strong brewed coffee
Instructions

Preheat oven to 170°C. Grease a 23cm loaf tin.

Whisk honey, sugar, oil, and eggs together until smooth.

Combine flour, baking powder, baking soda, and cinnamon.

Add dry ingredients to wet mixture alternating with the coffee.

Stir in vanilla extract.

Pour into prepared tin and bake for 45-50 minutes.

Cool in tin for 10 minutes, then turn out onto a rack.
