Stuffed Capsicums with Rice and Herbs

Ingredients

  • 2 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 1 Onion
  • 2 cloves Garlic
  • 1 teaspoon Cumin
  • 2 tablespoons Fresh mint
  • 2 tablespoons Fresh parsley
  • 200 g Long-grain rice
  • 400 g Canned diced tomatoes
  • 4 Large capsicums

Instructions

    Preheat oven to 180°C.

    Sauté onion and garlic in olive oil until softened.

    Mix cooked rice with sautéed onion, half the tomatoes, mint, parsley, and cumin.

    Season the filling with salt and pepper.

    Stuff each capsicum with the rice mixture.

    Place capsicums in a baking dish. Pour remaining tomatoes around them.

    Bake for 35-40 minutes until capsicums are tender.
