Ingredients
- 2 tablespoons Olive oil
- 1 Salt and pepper to taste
- 2 tablespoons Tomato paste
- 4 cloves Garlic
- 4 Carrots
- 3 Potatoes
- 1 teaspoon Paprika
- 1.5 kg Beef brisket
- 400 g Canned diced tomatoes
- 2 Onions
- 250 ml Beef broth
- 1 teaspoon Dried thyme
Instructions

Preheat oven to 160°C. Season brisket with salt, pepper, and paprika.

Heat olive oil in a Dutch oven. Sear brisket on all sides until browned.

Add onions, carrots, potatoes, and garlic around the brisket.

Mix tomatoes, broth, and tomato paste. Pour over the brisket.

Sprinkle with thyme. Cover tightly with a lid.

Cook for 3 hours until the brisket is fork-tender.

Slice against the grain and serve with the vegetables and pan juices.
