Ingredients

  • 3 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 1 Red onion
  • 2 tablespoons Lemon juice
  • 1 Cucumber
  • 50 g Fresh mint
  • 50 g Fresh parsley
  • 200 g Cherry tomatoes
  • 250 g Israeli couscous
  • 100 g Kalamata olives

Instructions

    Cook Israeli couscous according to package directions. Drain and let cool.

    Combine cooled couscous with cucumber, tomatoes, red onion, and olives.

    Add fresh mint and parsley.

    Whisk together olive oil and lemon juice. Pour over salad.

    Season with salt and pepper. Toss gently and serve.
