Ingredients
- 2 tablespoons Olive oil
- 6 Eggs
- 1 Salt and pepper to taste
- 1 Red capsicum
- 3 cloves Garlic
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 400 g Canned crushed tomatoes
- 1 Crusty bread for serving
- 1 Large onion
- 400 g Canned diced tomatoes
- 1 Fresh parsley for garnish

Heat olive oil in a large skillet over medium heat. Sauté onion and capsicum for 5 minutes until softened.

Add garlic, cumin, and paprika. Cook for 1 minute until fragrant.

Pour in crushed and diced tomatoes. Season with salt and pepper. Simmer for 10 minutes.

Make 6 wells in the sauce and crack an egg into each.

Cover and cook for 8-10 minutes until egg whites are set but yolks are still runny.

Garnish with fresh parsley and serve with crusty bread.
