Vegan Crêpes with Berry Compote

Ingredients

  • 2 tbsp Maple syrup
  • 1 cup Plain flour
  • 1 tbsp Lemon juice
  • 1 tbsp Sugar
  • 1 tsp Vanilla extract
  • 1.5 cups Plant milk
  • 1/4 tsp Salt
  • 1 tsp Coconut oil
  • 2 cups Berries

Instructions

    Whisk flour, plant milk, sugar, vanilla and salt until smooth. Let rest 10 minutes.

    Heat a non-stick pan over medium heat with a tiny bit of coconut oil.

    Pour a thin layer of batter and swirl to coat. Cook for 1-2 minutes each side.

    For the compote: cook mixed berries with maple syrup and lemon juice for 5-8 minutes until jammy.

    Serve crêpes folded with warm berry compote and a dusting of icing sugar.
