Ingredients
- 3 tbsp Olive oil
- 2 Zucchini
- 2 tbsp Dijon mustard
- 2 cloves Garlic
- 3 Tomatoes
- 1 Puff pastry
- 1/2 tsp Black pepper
- 1 Eggplant
- 1 tsp Salt
- 1 tbsp Herbes de provence
- 2 tbsp Basil
Instructions

Preheat oven to 200°C. Roll out puff pastry into a tart tin.

Spread a thin layer of Dijon mustard over the base.

Slice tomatoes, zucchini and eggplant into thin rounds.

Arrange vegetables in alternating overlapping rows on the pastry.

Drizzle with olive oil and sprinkle with herbes de Provence, garlic and salt.

Bake for 35-40 minutes until pastry is golden and vegetables are tender.

Scatter fresh basil before serving.
