Ingredients
- 4 tbsp Olive oil
- 1 Red onion
- 1 tbsp Lemon juice
- 1 tsp Dijon mustard
- 1 cloves Garlic
- 1 Lettuce
- 200 g Green beans
- 1 cup Cherry tomatoes
- 1/2 cup Black olives
- 2 tbsp Red wine vinegar
- 1 tsp Salt
- 400 g Chickpeas
- 300 g Baby potatoes
- 1 tbsp Capers

Boil baby potatoes until tender, about 15 minutes. Halve when cool.

Blanch green beans for 3 minutes, then plunge into ice water.

Marinate chickpeas in lemon juice, capers, Dijon mustard and olive oil for 10 minutes.

Arrange lettuce on plates. Top with potatoes, green beans, cherry tomatoes, olives, chickpeas and red onion.

Make dressing: whisk olive oil, red wine vinegar, Dijon mustard, garlic and herbs.

Drizzle dressing over salad and serve.
