Vegan French Onion Soup

Ingredients

  • 2 tbsp Olive oil
  • 6 Onion
  • 1 l Vegetable stock
  • 3 cloves Garlic
  • 1/2 cup White wine
  • 1/2 tsp Black pepper
  • 1 Baguette
  • 20 g Vegan butter
  • 3 sprigs Thyme
  • 1 tsp Salt

Instructions

    Heat olive oil and vegan butter in a large pot over medium-low heat.

    Add thinly sliced onions and a pinch of salt. Cook slowly for 35-40 minutes, stirring occasionally, until deeply caramelised.

    Add garlic and thyme, cook for 1 minute.

    Deglaze with white wine, scraping up the brown bits.

  5. 5

    Add vegetable stock and simmer for 10 minutes. Season with salt and pepper.

    Ladle into bowls. Top with toasted baguette slices and serve.
