Loaded Sweet Potato Fries

Ingredients
- 2 tbsp Olive oil
- 1 Avocado
- 600 g Sweet potato
- 1 tbsp Lemon juice
- 1 tsp Smoked paprika
- 2 tbsp Coriander
- 1 tsp Garlic powder
- 200 g Black beans
- 1/2 cup Cashews
- 1 tsp Salt
- 2 Spring onion
Instructions

Preheat oven to 220°C. Cut sweet potatoes into fries.

Toss with olive oil, smoked paprika, garlic powder and salt.

Spread on a baking tray and bake for 25-30 minutes, flipping halfway.

While fries bake, make cashew cream: blend soaked cashews, water, lemon juice and salt.

Serve fries topped with black beans, avocado, spring onion, coriander and cashew cream.
