Ingredients

  • 1 tbsp Olive oil
  • 1 tbsp Lime juice
  • 1 Onion
  • 1 cup Vegetable stock
  • 3 cloves Garlic
  • 1 Capsicum
  • 1 tsp Smoked paprika
  • 2 tsp Cumin
  • 1 tsp Oregano
  • 400 g Black beans
  • 400 g Crushed tomatoes
  • 400 g Kidney beans
  • 1 cup Corn
  • 1 tsp Salt
  • 1 tbsp Chilli powder

Instructions

    Heat olive oil in a large pot. Cook onion and capsicum for 5 minutes.

    Add garlic, cumin, chilli powder, smoked paprika and oregano. Stir for 1 minute.

    Add crushed tomatoes, kidney beans, black beans, corn and vegetable stock.

    Bring to a boil, then simmer for 30 minutes, stirring occasionally.

    Season with salt, pepper and lime juice.

    Serve with rice, avocado and coriander.
