Ingredients

  • 1 Carrot
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 2 cloves Garlic
  • 200 g Potatoes
  • 1/4 tsp Turmeric
  • 1/2 tsp Smoked paprika
  • 1/4 cup Nutritional yeast
  • 1 tsp Onion powder
  • 1/2 cup Plant milk
  • 1 tsp Salt
  • 400 g Pasta

Instructions

    Cook pasta according to packet directions. Drain.

    While pasta cooks, boil potato and carrot until very soft, about 12 minutes. Drain.

    Blend cooked potato, carrot, nutritional yeast, garlic, plant milk, lemon juice, mustard, turmeric, onion powder, salt and pepper until silky smooth.

    Toss sauce through pasta. Adjust seasoning.

    Serve immediately, optionally topped with smoked paprika and breadcrumbs.
