Vegan Sticky Toffee Pudding

Ingredients
- 1 tsp Baking powder
- 1.5 cups Plain flour
- 3/4 cup Brown sugar
- 200 g Dates
- 1 tsp Vanilla extract
- 1 tsp Baking soda
- 1/4 tsp Salt
- 3 tbsp Coconut oil
- 200 ml Coconut cream
Instructions

Preheat oven to 180°C. Grease a baking dish.

Soak chopped dates in boiling water with baking soda for 10 minutes. Mash slightly.

Mix flour, baking powder, sugar and salt. Add date mixture, coconut oil and vanilla. Stir until combined.

Pour into dish and bake for 30-35 minutes.

Make sauce: heat coconut cream, brown sugar and vanilla in a saucepan until thick and bubbly, about 5 minutes.

Pour warm sauce over pudding and serve.
