Vegan Mushroom Bourguignon

Ingredients
- 2 tbsp Olive oil
- 2 Onion
- 2 tbsp Tomato paste
- 2 Carrot
- 1 cup Vegetable stock
- 3 cloves Garlic
- 1 cup Red wine
- 600 g Mushrooms
- 2 Bay leaves
- 1/2 tsp Black pepper
- 2 Celery
- 3 sprigs Thyme
- 1 tsp Salt

Heat olive oil in a large casserole. Brown mushrooms in batches, then set aside.

Add onion, carrot and celery. Cook for 5 minutes.

Add garlic and tomato paste, stir for 1 minute.

Pour in red wine and let it reduce by half, about 3 minutes.

Add vegetable stock, bay leaves and thyme. Return mushrooms to pot.

Simmer for 30 minutes until sauce thickens. Season with salt and pepper.

Serve over creamy mashed potatoes or with crusty bread.
