Zucchini Noodle Pad Thai

Ingredients

  • 2 tbsp Lime juice
  • 1 tbsp Maple syrup
  • 4 Zucchini
  • 1 Capsicum
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1/4 cup Peanuts
  • 1 cup Bean sprouts
  • 300 g Tofu
  • 3 tbsp Peanut butter
  • 1 tsp Sriracha
  • 2 Spring onion

Instructions

    Spiralise zucchinis into noodles (or use a peeler for ribbons).

    Make sauce: whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha and water.

    Heat sesame oil in a wok over high heat. Stir-fry tofu until golden, about 4 minutes.

    Add capsicum and bean sprouts, cook for 2 minutes.

    Add zucchini noodles and sauce. Toss for 1-2 minutes until just wilted.

    Serve topped with crushed peanuts, spring onion and lime wedges.
