Smashed Avo on Sourdough

Ingredients

  • 1 tbsp Olive oil
  • 2 Avocado
  • 1 tbsp Lemon juice
  • 1 tbsp Pumpkin seeds
  • 1 cup Cherry tomatoes
  • 1/4 tsp Black pepper
  • 4 slices Sourdough bread
  • 1/2 tsp Salt
  • 1/2 tsp Chilli flakes

Instructions

    Toast sourdough slices until golden.

    Halve the avocados and scoop flesh into a bowl.

  3. 3

    Mash with a fork, add lemon juice, chilli flakes, salt and pepper.

    Spread generously over toast. Top with cherry tomatoes, pepitas and a drizzle of olive oil.
