Vegan Pumpkin Soup

Ingredients

  • 1 tbsp Olive oil
  • 1 Onion
  • 2 Carrot
  • 1 l Vegetable stock
  • 1 kg Pumpkin
  • 2 cloves Garlic
  • 1/2 tsp Nutmeg
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 200 ml Coconut cream

Instructions

    Heat olive oil in a large pot. Add onion and garlic, cook for 3 minutes.

    Add diced pumpkin, carrot and vegetable stock. Bring to a boil.

    Reduce heat and simmer for 25 minutes until pumpkin is very soft.

    Add coconut cream. Blend until smooth using a stick blender.

    Season with nutmeg, salt and pepper. Serve with crusty bread.
