Sweet Potato and Chickpea Curry

Ingredients
- 1 tbsp Lime juice
- 400 ml Coconut milk
- 1 Onion
- 1 cup Vegetable stock
- 500 g Sweet potato
- 3 cloves Garlic
- 2 tbsp Curry powder
- 2 cups Spinach
- 1 tsp Turmeric
- 1 tbsp Ginger
- 2 tbsp Coriander
- 1 tsp Cumin
- 1 tsp Salt
- 400 g Chickpeas
- 1 tbsp Coconut oil

Heat coconut oil in a large pot over medium heat. Add onion and cook for 3 minutes.

Add garlic, ginger, curry powder, cumin and turmeric. Stir for 1 minute until fragrant.

Add diced sweet potato, chickpeas, coconut milk and vegetable stock.

Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potato is tender.

Stir in spinach and lime juice. Season with salt and pepper.

Serve over steamed rice with fresh coriander.
