Barley and Lentil Bowl

Ingredients

  • 1 tbsp Olive oil
  • 1 Avocado
  • 1 Onion
  • 1 tbsp Lemon juice
  • 2 cloves Garlic
  • 1 Cucumber
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 1 cup Cherry tomatoes
  • 1 cup Pearl barley
  • 1 tsp Salt
  • 2 cups Rocket
  • 400 g Lentils
  • 2 tbsp Tahini

Instructions

    Cook pearl barley in boiling salted water for 25-30 minutes until tender. Drain.

    Meanwhile, heat olive oil in a pan. Add onion and garlic, cook for 3 minutes.

    Add cumin and smoked paprika, stir for 30 seconds until fragrant.

    Add drained tinned lentils and cook for 5 minutes until warmed through.

    Combine barley and lentil mixture in bowls.

    Top with sliced avocado, cherry tomatoes, cucumber and a handful of rocket.

    Drizzle with tahini dressing (tahini, lemon juice, water, pinch of salt) and serve.
