Barley Pilaf with Herbs

Ingredients

  • 2 tbsp Olive oil
  • 1 Lemon
  • 1 Onion
  • 3 cups Vegetable stock
  • 2 cloves Garlic
  • 3 tbsp Parsley
  • 1/2 tsp Black pepper
  • 2 tbsp Mint
  • 1.5 cups Pearl barley
  • 1 tsp Salt

Instructions

    Heat olive oil in a saucepan over medium heat.

    Add onion and cook for 3 minutes until translucent.

    Add garlic and pearl barley, stir for 1 minute to toast the barley.

    Pour in vegetable stock. Bring to a boil, then reduce heat to low.

    Cover and simmer for 35-40 minutes until barley is tender and liquid is absorbed.

    Fluff with a fork. Stir through chopped parsley, mint and lemon zest.

    Season with salt, pepper and a drizzle of extra virgin olive oil.

    Serve as a side dish with grilled meats or roasted vegetables.
