Beef and Barley Stew

Ingredients

  • 2 tbsp Olive oil
  • 1 Onion
  • 1.5 l Beef stock
  • 2 tbsp Tomato paste
  • 2 Carrot
  • 3 cloves Garlic
  • 2 Bay leaves
  • 800 g Beef chuck
  • 1/2 tsp Black pepper
  • 1 cup Pearl barley
  • 2 Celery
  • 1 cup Frozen peas
  • 3 sprigs Thyme
  • 1 tsp Salt

Instructions

    Cut beef chuck into 3cm cubes and season with salt and pepper.

    Heat olive oil in a large heavy-based pot over high heat. Brown beef in batches, then set aside.

    Reduce heat to medium. Add onion, carrot and celery, cook for 5 minutes until softened.

    Add garlic and tomato paste, stir for 1 minute.

    Return beef to pot. Add beef stock, pearl barley, bay leaves and thyme.

    Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours until beef is tender and barley is cooked.

    Stir in frozen peas in the last 5 minutes.

    Season to taste and serve with crusty bread.
