Ingredients

  • 1/2 cup Spinach
  • 1 tbsp Soy sauce
  • 4 cups Vegetable broth
  • 1 Green onion
  • 1 tbsp Mirin
  • 2 Packs udon noodles
  • 1/2 cup Sliced mushrooms

Instructions

    Heat broth, soy sauce, and mirin.

    Add mushrooms and simmer.

    Cook udon noodles, drain.

    Add noodles and spinach to soup.

    Top with green onion.
