- 1/2 cup Spinach
- 1 tbsp Soy sauce
- 4 cups Vegetable broth
- 1 Green onion
- 1 tbsp Mirin
- 2 Packs udon noodles
- 1/2 cup Sliced mushrooms

Heat broth, soy sauce, and mirin.

Add mushrooms and simmer.

Cook udon noodles, drain.

Add noodles and spinach to soup.
