Ingredients

  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 1 tbsp Sugar
  • 2 tbsp Soy sauce
  • 2 Green onions
  • 1 tbsp Rice vinegar
  • 2 Chinese eggplants

Instructions

    Heat oil in pan, fry eggplant strips until soft.

    Add garlic, cook 1 minute.

    Stir in soy sauce, vinegar, and sugar; simmer 3 minutes.

    Top with green onions and serve.
