Ingredients
- 2 cloves Garlic
- 1 tbsp Sugar
- 1 tbsp Soy sauce
- 2 tbsp Oil
- 2 Eggplants
- 1 tbsp Rice vinegar
- 2 Scallions
- 2 tbsp Doubanjiang
Instructions

Salt eggplant, let sit 10 min, rinse and dry.

Stir-fry eggplant in oil until soft.

Add garlic, doubanjiang, fry 1 min.

Add soy sauce, vinegar, sugar, scallions, toss.
