Jianbing (Chinese Breakfast Crepes)

Ingredients

  • 2 Eggs
  • 3/4 cup Water
  • 1 cup All-purpose flour
  • 1/4 cup Mung bean flour
  • 2 Scallions
  • 2 tbsp Hoisin sauce
  • 2 Fried wonton wrappers

Instructions

    Mix flours and water to make a thin batter.

    Heat a nonstick pan and pour a ladle of batter, spreading thinly.

    Crack an egg on top, spreading evenly, and sprinkle scallions.

    Flip crepe, brush with hoisin sauce, add fried wonton, fold, and serve.
