Ingredients

  • 100 ml Vegetable oil
  • 1 Onion
  • 4 cloves Garlic
  • 500 g Chicken breast
  • 1.5 l Chicken stock
  • 100 g Flour
  • 3 Stalks celery
  • 500 g Andouille sausage
  • 500 g Shrimp
  • 1 Bell pepper
  • 1 Okra
  • 1 File powder
  • 1 Cooked rice

Instructions

    Make dark roux: cook flour in oil, stirring constantly, until chocolate brown, 20-30 minutes.

    Add trinity (onion, pepper, celery) and garlic. Cook 5 minutes.

    Add stock, bring to simmer.

    Add sausage and chicken. Simmer 45 minutes.

    Remove chicken, shred, return to pot with okra.

  6. 6

    Add shrimp in last 5 minutes.

    Serve over rice with file powder.
