Ingredients

  • 1 Onion
  • 300 g Chicken breast
  • 750 ml Chicken stock
  • 1 Fresh parsley
  • 400 g Canned tomatoes
  • 3 Stalks celery
  • 200 g Andouille sausage
  • 200 g Shrimp
  • 300 g Long-grain rice
  • 1 Bell pepper
  • 1 Cajun seasoning

Instructions

    Brown chicken and sausage. Set aside.

    Sauté onion, pepper and celery (the 'trinity').

  3. 3

    Add rice, toast briefly.

  4. 4

    Add tomatoes, stock and Cajun seasoning.

  5. 5

    Return meat. Bring to boil, reduce heat, cover.

  6. 6

    Cook 20 minutes. Add shrimp in last 5 minutes.

  7. 7

    Garnish with parsley.
