Ingredients
- 1 Onion
- 500 ml Beef stock
- 6 cloves Garlic
- 2 tablespoons Flour
- 2 tablespoons Cumin
- 1 kg Beef chuck
- 4 Dried ancho chiles
- 2 Dried guajillo chiles
- 1 tablespoon Oregano
- 1 Salt to taste
Instructions

Toast and rehydrate chiles. Blend with garlic and some soaking liquid.

Brown beef in batches. Set aside.

Sauté onion. Add cumin, oregano and flour.

Add chile paste, stock and beef.

Simmer 2.5-3 hours until beef is tender.

Adjust seasoning. Serve with cornbread.
