Ingredients

  • 8 Eggs
  • 4 English muffins
  • 8 slices Canadian bacon
  • 1 For hollandaise: 3 egg yolks
  • 1 Chives for garnish
  • 1 Vinegar for poaching

Instructions

    Make hollandaise: whisk yolks over double boiler, slowly drizzle in melted butter. Add lemon and cayenne.

    Toast muffins. Warm Canadian bacon.

    Poach eggs in simmering water with vinegar, 3-4 minutes.

    Assemble: muffin, bacon, poached egg, hollandaise.

    Garnish with chives. Serve immediately.
