Ingredients

  • 200 g Bacon rashers
  • 500 ml Milk
  • 2 Onion
  • 500 g Potatoes
  • 1 Fresh thyme
  • 250 ml Heavy cream
  • 1 kg Fresh clams or 400g canned clams
  • 3 Stalks celery
  • 500 ml Clam juice
  • 1 Oyster crackers for serving

Instructions

    Cook bacon until crispy. Remove and set aside.

    Sauté onions and celery in bacon fat until soft.

  3. 3

    Add potatoes, clam juice and thyme. Simmer until potatoes are tender.

    Add milk, cream and clams. Heat through without boiling.

  5. 5

    Season with salt and pepper.

  6. 6

    Serve topped with bacon and oyster crackers.
