Ingredients
- 200 g Bacon rashers
- 500 ml Milk
- 2 Onion
- 500 g Potatoes
- 1 Fresh thyme
- 250 ml Heavy cream
- 1 kg Fresh clams or 400g canned clams
- 3 Stalks celery
- 500 ml Clam juice
- 1 Oyster crackers for serving
Instructions

Cook bacon until crispy. Remove and set aside.

Sauté onions and celery in bacon fat until soft.

Add potatoes, clam juice and thyme. Simmer until potatoes are tender.

Add milk, cream and clams. Heat through without boiling.

Season with salt and pepper.

Serve topped with bacon and oyster crackers.
