Ingredients

  • 2 Onion
  • 4 cloves Garlic
  • 4 Tomatoes
  • 1 Fennel bulb
  • 1 Orange zest
  • 1 kg Mixed fish and fish bones
  • 1 Saffron
  • 1 Rouille and croutons for serving

Instructions

    Sauté onions, fennel and garlic.

    Add fish, tomatoes, saffron and orange zest.

    Cover with water, simmer 30 minutes.

  4. 4

    Blend and strain through fine sieve.

  5. 5

    Serve with rouille and croutons.
