Ingredients
- 2 Onion
- 4 cloves Garlic
- 4 Tomatoes
- 1 Fennel bulb
- 1 Orange zest
- 1 kg Mixed fish and fish bones
- 1 Saffron
- 1 Rouille and croutons for serving
Instructions

Sauté onions, fennel and garlic.

Add fish, tomatoes, saffron and orange zest.

Cover with water, simmer 30 minutes.

Blend and strain through fine sieve.

Serve with rouille and croutons.
