Ingredients

  • 4 slices Bread
  • 3 Onion
  • 1 Dijon mustard
  • 2 tablespoons Brown sugar
  • 2 tablespoons Flour
  • 1 kg Beef chuck
  • 2 tablespoons Red wine vinegar
  • 1 Bouquet garni
  • 500 ml Belgian brown ale

Instructions

    Brown beef in batches. Set aside.

    Caramelize onions, 20 minutes.

  3. 3

    Return beef. Sprinkle with flour.

    Add beer, sugar, vinegar and bouquet garni.

    Spread bread with mustard, press into stew.

    Cover and braise at 160°C for 2.5-3 hours.

    Stir to incorporate bread. Serve with frites.
