Ingredients
- 1 Salt and pepper to taste
- 60 g Butter
- 1 l Vegetable stock
- 100 ml Cream
- 500 g Potatoes
- 4 Leeks
- 1 Fresh chives
Instructions

Sauté leeks in butter until soft.

Add potatoes and stock. Simmer 25 minutes.

Blend until smooth.

Stir in cream. Season to taste.

Serve hot, garnished with chives.

Can also be served cold as vichyssoise.
