Gâteau Basque

Ingredients

  • 2 Eggs
  • 125 g Butter
  • 1 teaspoon Baking powder
  • 125 g Sugar
  • 250 g Flour
  • 1 Zest of 1 lemon
  • 300 ml Pastry cream
  • 1 Egg yolk for glaze

Instructions

    Cream butter and sugar. Add eggs, lemon zest.

    Mix in flour and baking powder. Refrigerate 1 hour.

    Press two-thirds of dough into a buttered cake pan.

    Fill with pastry cream.

    Roll remaining dough, place on top. Seal edges.

    Brush with egg yolk. Score decorative pattern.

    Bake at 180°C for 40-45 minutes until golden.

    Cool before serving.
