Ingredients
- 60 g Butter
- 200 ml Cream
- 6 Leeks
- 1 Nutmeg
- 1 Sheet shortcrust pastry
- 3 Egg yolks
- 1 Sheet puff pastry
- 1 Egg for glaze
Instructions

Cook leeks in butter over low heat until very soft, 20 minutes. Cool.

Mix leeks with yolks, cream, nutmeg, salt and pepper.

Line a tart pan with shortcrust pastry.

Fill with leek mixture.

Cover with puff pastry, crimp edges.

Cut slits for steam. Brush with beaten egg.

Bake at 200°C for 30-35 minutes until golden.
