Ingredients
- 1 Salt and pepper to taste
- 4 tablespoons Dijon mustard
- 200 ml Cream
- 200 ml White wine
- 1 Fresh thyme
- 200 g Bacon lardons
- 2 Shallots
- 1 Rabbit
Instructions

Coat rabbit pieces with mustard. Season with salt and pepper.

Brown in a Dutch oven. Set aside.

Cook bacon until crispy. Add shallots and cook until soft.

Add wine, scrape up browned bits. Add thyme.

Return rabbit to pot. Cover and cook 45 minutes.

Remove rabbit. Add cream to sauce, reduce until thickened.

Pour sauce over rabbit. Serve with rice or potatoes.
