Ingredients
- 3 Eggs
- 1 Salt and pepper to taste
- 30 g Butter
- 1 tablespoon Fresh parsley
- 1 tablespoon Fresh chives
- 1 tablespoon Fresh tarragon
- 1 tablespoon Fresh chervil
Instructions

Beat eggs with herbs, salt and pepper.

Melt butter in a non-stick pan over medium-high heat.

Pour in eggs, stir briefly with fork.

When mostly set but still creamy, fold in thirds.

Slide onto plate, seam-side down.

Rub with a little butter for shine.
